Don't let deep-fat temperatures get too high. Overseasoning results in comebacks. Use skim or condensed milk where possible. Weigh portions. Don't use aprons, etc. for cleaning. Don't over-roast, overcook or burn. Use ovens at full capacity. Keep flame under pan, not up over edges. Watch portion sizes.
